As promised, today I am going to share my favorite Pulao recipe. Pulao is essentially a rice dish made with beautiful aromatics like Cumin, Ghee, and Crispy Fried Shallots. The richness of Pulao comes from the ghee and this makes it more special than just steamed rice. Out of the hundred different forms of Pulao, this Cumin and Pea Pulao has to be my favorite. It is simple but has enough flavor to beautifully complement other dishes like my Tomato Lamb Curry.
I hope you like what you see and definitely play around with the flavors. The essence of Pulao lies in the types of aromatics you use. For instance, you can add in some Cardamom, Cinnamon, Bay Leaf, Lime leaves, Preserved Lemons, and so forth, so don't hesitate to Make It Your Way!
INGREDIENTS 3 cups of Jasmine rice 5 cups of water 2 tbsp Ghee 2 tbsp Cumin seeds 1 cup of Green Peas 1 cup Crispy Fried Shallots 2 tsp Salt
STEPS Heat Ghee over medium heat. Once warm, add in cumin seeds until they start to sizzle. Add the peas, rice, salt and 1/2 cup of Crispy Fried Shallots and mix for 3-5 mins. This process allows for the flavors to infuse with the rice.
Now add the water and let it cook over medium heat for 15-20 minutes with the lid on. Once the water has dried away completely, check that your rice is cooked. If it still tastes a bit grainy, then you can add a bit more water and let it sit for another 5-7 minutes. Once your rice is cooked, take the lid off and using a fork just fluff up the rice. Don't use a spoon because you are more likely to crush the rice grains this way.
Once content, add in the rest of the crispy fried shallots, give it a good mix and serve!
